Finger Potatoes with Tomatoes and Zucchini



  • Olive oil
  • 1 onion
  • 10 medium fingerling potatoes
  • Water
  • 1 teaspoon garlic
  • A few springs fresh chopped thyme
  • 2 tablespoons fresh chopped parsley
  • 1 large tomato
  • 1 zucchini
  • 1 organic vegetable bouillon cube
  • Salt
  • Pepper

1. Add olive oil to pan and heat until hot
2. Add onion and cook until soft
3. Add fresh garlic
4. Cut finger potatoes in half and add to pan
5. Add enough water to cover the potatoes
6. Season with salt
7. Simmer until potatoes are half done
8. Add zucchini and thyme and simmer with the potatoes. Add more water if needed.
9. Add parsley and tomatoes when zucchini and potatoes are almost done cooking
10. Add the cube
11. Simmer for a bit more and season with salt and pepper as needed
12. Serve with rice
