Lime Relish


  • 15 limes from Rodrigues or Key West (small-size limes)
  • 10 small green chillies, diced
  • 1 cup of vegetable oil
  • 2 tbsp of turmeric powder
  • 5 cloves of garlic, crushed
  • 2 tsp of mustard seeds, crushed
  • a few pinches of salt
  1. Boil the whole limes in salted water for approximately five minutes.
  2. Allow limes and water to cool.
  3. Keep the cooking water.
  4. Leave limes and water to macerate in a non-metallic jar for fifteen days.
  5. After fifteen days, take the limes out of the jar, cut them into small pieces and remove all seeds.
  6. Heat the oil in a large fry pan until very hot.
  7. Turn off heat and add the turmeric, garlic, chillies, lime and mustard.
  8. Stir until blended.
  9. Allow mixture to cool before putting back into glass jar.
  10. Mixture will keep in the refrigerator for about two weeks or so.
