Shrimp with Red and Green Peppers



  • 12 medium size, fresh shrimp (peeled and deveined)
  • 1 green pepper cut into small slices
  • 1 red pepper cut into small slices
  • 1 small to medium onion cut into chunks
  • ½ to ¾ can of diced tomatoes
  • 3/4 tablespoon of fresh garlic
  • 1 small bunch fresh flat leaf parsley chopped
  • Vegetable oil
  • Water
  • Salt 
  1. Season and marinade the shrimp with the garlic, salt, and pepper
  2. Heat oil in wok or large fry pan
  3. Add shrimp and onion to the pan
  4. Cook shrimp until done
  5. In the meantime, add tomatoes to mixer and blend until smooth
  6. Add a small amount of water to blender to create a sauce (not too soupy)
  7. Add the sauce to the pan with the shrimp
  8. Season with salt
  9. Simmer for 5 to 10 minutes
  10. Add the peppers to the pan
  11. Add the parsley to the pan
  12. Add a small amount  of water to the pan and let cook
  13. Simmer  for 20 to 30 minutes stirring occasionally
  14. Serve with rice
