Ingredients:
- 12 medium size, fresh shrimp (peeled and deveined)
- 1 green pepper cut into small slices
- 1 red pepper cut into small slices
- 1 small to medium onion cut into chunks
- ½ to ¾ can of diced tomatoes
- 3/4 tablespoon of fresh garlic
- 1 small bunch fresh flat leaf parsley chopped
- Vegetable oil
- Water
- Salt
- Season and marinade the shrimp with the garlic, salt, and pepper
- Heat oil in wok or large fry pan
- Add shrimp and onion to the pan
- Cook shrimp until done
- In the meantime, add tomatoes to mixer and blend until smooth
- Add a small amount of water to blender to create a sauce (not too soupy)
- Add the sauce to the pan with the shrimp
- Season with salt
- Simmer for 5 to 10 minutes
- Add the peppers to the pan
- Add the parsley to the pan
- Add a small amount of water to the pan and let cook
- Simmer for 20 to 30 minutes stirring occasionally
- Serve with rice
