Tomato Chutney


  • 1 large ripe tomato
  • ½ medium onion
  • 1 small bunch cilantro (coriander)
  • 2-3 small green chilies (piment)
  • Salt
  • Olive oil
  • Orange flavored sherry vinegar (great addition, but not necessary)
  1. Chop tomato into very small pieces
  2. Dice onion
  3. Dice piment into extremely small pieces
  4. Mix all together in small bowl
  5. Add salt and olive oil and mix
  6. If using, add just a small splash of vinegar and mix
  7. Add chopped coriander and mix
  8. Serve with fish, shrimp, chicken or small toasts or fresh bread
