Bouillion Bredes


  • 1 large bunch of fresh Bred (a spinach and watercress mixture).  If you can’t find Bred, use young, baby spinach leaves with fresh watercress.
  • 1 medium onion chopped
  • 1½ tablespoons fresh garlic
  • 1 vegetable bouillion cube (organic if you can find it)
  • Olive oil
  • Salt
  1. Heat oil in small soup pan
  2. Add onion to pan and cook until soft
  3. Add 1 tablespoon garlic to pan and cook for one minute
  4. Add water until half the pan is full
  5. Add ½ tablespoon garlic and cube to pan and bring to boil
  6. Add bred to pan
  7. Season with salt and let simmer for 10 minutes
  8. Remove from heat
  9. Serve as a starter with mini-toasts and fresh tomato chutney
