Winter Green Pumpkin Gratin


  • 1 large slice of green pumpkin (should be dark green on outside and bright yellow on the inside)
  • 4 tablespoons of butter
  • ½ onion diced
  • 1 small bunch of fresh chopped parsley
  • A few springs of fresh chopped thyme
  • Milk
  • ½ cup shredded gruyère cheese
  • 1 ½ teaspoon cornflour (also known as cornstarch in the US & UK)
  • Salt
  • Pepper
  • Water
  1. Melt butter in saucepan
  2. Add onion and cook until soft
  3. Add parsley and thyme to pan
  4. Add a small amount of water
  5. Season with salt
  6. Add the pumpkin cut into small pieces and cook until soft
  7. Add cornflour to a small bowl
  8. Add a little milk to small bowl to dissolve corn flour completely
  9. When pumpkin is done, smash it with with a large spoon or fork in the pan to create a puree
  10. Add the corn flour mixture to the pan with pumpkin and stir gently
  11. Add some more milk
  12. Season with salt and pepper if necessary
  13. Add a small amount of cheese
  14. Place mixture in a gratin dish and spread evenly
  15. Sprinkle more cheese on top
  16. Bake in a high oven for a few minutes to melt the cheese
